This is just so satisfying. Sticky, spicy, sweet and a bit crispy. You definitely won't feel deprived. So crank up your oven, we are getting sweet and spicy...
We eat our fair share of chicken. It's quick, it's healthy, protein packed and lean. Everything I want for a weeknight dinner.
I love fried chicken. What southern girl doesn't? I also love sweet and spicy. So these make me a happy girl. I feel like I'm eating fried food without the aftermath. Plus, they have tons of flavor. That pleases my culinary sensibilities.
Try these!
Serves 4
Preheat oven 425 degrees
Line a baking sheet with parchment paper. Using a jelly-roll pan is best.
Ingredients
1 1/2 lbs skinless boneless chicken breast, cut into strips
Crust ingredients
2 cups almond meal
1 cup unsweetened coconut, shredded
1 tsp kosher salt
1/2 tsp cracked black pepper
1 tsp garlic powder
Egg wash
2 eggs, slightly beaten
2 tbsp water
Orange Spicy Sticky Sauce
2/3 cup honey (raw and unfiltered if you have it)
1/4 cup hot sauce, such as Frank's red
hot
Juice of 1 clementine (they are super sweet)
1/2 tsp garlic powder
How it's done!
Cut your chicken breast into strips.
Place the crust ingredients into a shallow dish and mix well.
Place the egg wash ingredients into a shallow pan and beat with a fork.
Next, dip each chicken strip into the crust mixture, then the egg wash, and back into the crust mixture. Place on the baking sheet lined with parchment.
Bake at 425 degrees for approximately 20-25 minutes. Flipping halfway through.
While the chicken is baking add your sauce ingredients to a skillet, bring to a boil for about 1 minute. Remove from heat.
When the chicken starts to brown take it out of the oven and pour the sauce over each piece, turning to coat.
Return to the oven for about 5 minutes to get the sauce sticky and hot.
These are filling and a great Faux Comfort Food! We had them with some yummy potatoes and a pretty salad.
