Remember the Chicken Carnitas recipe? This is what happened to some of the leftovers at our house.
Stuffed into jalapeños and topped with a Creamy Salsa Dip. Easy to make. Even easier to eat!
These are Paleo Friendly and Gluten Free. A perfect appetizer for any occasion!
After Hero and I finished eating our way through these delicious poppers...I saw that we had a curious friend hanging out in the kitchen. Luke the Goldendoodle seems to always be hanging out in the kitchen!
I will say, it is actually pretty great to have such a dedicated fan when you're cooking.
I'm assuming the smell of bacon was just too much for him. Look at that face!
So hard to resist those soulful eyes.
The process for this is super simple. Just cut some jalapeño peppers in half, seed them, stuff them, wrap them, and bake them. Oh, and eat them!
This is how we begin.
Ingredients
Leftover Chicken Carnitas (You can actually use any meat that you have left over, just chop it up)
4 medium jalapeño peppers
4 strips bacon, cut in half
Cut the jalapeños in half. Remove and discard the seeds.
Stuff each half with 1 heaping tablespoon of Chicken Carnitas. It's not really an accurate measurement. Just however much you can get in there.
Wrap each pepper with a piece of bacon that was cut in half.
Place on a baking sheet or in a cast iron skillet, seam side down to prevent bacon from unraveling.
Bake at 450 degrees for about 15-20 minutes. Turning over halfway through cooking to brown both sides. If you have thick cut bacon, it will take a little longer to cook.
Creamy Salsa
1 tbsp Mayonnaise, try to find one without too many ingredients. Look for a brand that doesn't have sugar if possible
3 tbsp Texas Girl's Salsa, or any store bought salsa work
Mix together and let sit for about 10 minutes for flavors to develop.
This makes a great salad dressing for a Taco Salad.
The Chicken Carnitas went so well with the flavor of the jalapeño peppers and the salty smokiness of the bacon. It was just perfect!
Drizzle a little Creamy Salsa over the top and serve!
Additional Creamy Salsa can be served on the side for dipping.
