Brussels Sprout and Apple Shaved Salad with Bacon Maple Chicken


This light salad has a refreshing clementine and lemon vinaigrette. A little chewy sweetness comes from the addition of golden raisins and a light crunch, from toasted sliced almonds.
Just a perfect side for some bacon and maple chicken breasts. 


This is an easy Gluten-free or Paleo meal that you can make ahead if you want a fast, ready to go lunch! 
This takes about 25 minutes from start to finish and serves 2. 
Preheat oven to 400 degrees

For the Salad

1 lb of Brussels sprout, shredded 
1 honey crisp apple, shredded 
2 tbsp lemon juice, fresh
2 tbsp clementine juice, fresh
1 tbsp honey, raw 
1/4 cup extra virgin olive oil
kosher salt and fresh cracked pepper to taste

1/4 cup golden raisins
1 tbsp sliced toasted almonds

For the Bacon Maple Chicken

2 skinless boneless chicken breasts
2 strips bacon
1 tbsp extra virgin olive oil
1 tbsp pure maple syrup
1 tsp Dijon mustard
1/4 tsp kosher salt, start with a o
1/8 tsp red pepper flakes



Cut the stem off of each sprout and take off outer leaves and any bruised or discolored leaves. Rinse to remove any dirt.

 

Cut each sprouts in half, lay flat, and shred but cutting into thin strips from the top to the stem end.


It should look like this when you are done. 



Next, shred the honey crisp apple with a cheese grater, careful of those fingers! Then place in a bowl with some lemon juice and water to keep the apple from turning brown.

Now make the vinaigrette! 
I used and old mason jar, add all of your vinaigrette ingredients, put on the lid, and shake!
Simple and Easy.
Taste and adjust salt.
Always start with a little bit of salt, you can always add more.




Then add everything to a bowl
The shredded sprouts, grated apple (drain the lemon water first),
Vinaigrette, raisins and toasted sliced almond.
Mix well.


















Now for the Chicken! 



Wrap each chicken breast in one strip of bacon. In a bowl, mix the extra virgin olive oil, maple syrup, Dijon mustard, salt and red pepper flakes in a small bowl. Spoon over the chicken and bake at 400 degrees for 16 minutes.
Then turn the broiler on high and leave under the broiler, watching it carefully, until the bacon is golden.

Serve with the Brussels Sprout and Apple Shaved Salad.

We took yesterday as an active rest day. Saturday was a tough leg day, so arms and abs it is today! 

I did one round this morning starting with a little stretching and foam rolling and followed up with 15 minutes of yoga/stretching. 



I homeschool so inevitably we spend a lot of time at home. Luke the Goldendoodle has shown signs of thinking he's human. He lays in the bed and "needs" a pillow for his head. 
But this might be the biggest sign that he thinks he is people. 
I walked in the room to find two homeschool students this morning. What in the world?!
