BBQ Stuffed Sweet Potatoes

When you have leftover BBQ you can't go wrong stuffing it into a delicious baked sweet potato. 

On Mother's Day I made my Texas Girl's BBQ Rub and slapped that onto a very nice Bone-In Boston Butt Roast. 


I stuck that awesomeness in my Pressure Cooker and it was ready when we got back from seeing the new Avengers movie! Happy Mother's Day to me! 

Just a quick note...if you can get meat with the bone in it...do it! It means more flavor! 
A bone-in Boston Butt is perfect for pulled pork! But when you make a 10 pound butt, you're going to have some leftovers! 

This is a super delicious and filling way to enjoy your BBQ. 

So if you're trying to stay away from grains this might be a good meal to try. 
This can be a great Paleo meal if you have the right BBQ sauce. I wasn't as worried about making my own sauce. I'm still living on Mother's Day time! 

Instead we had a gluten free store bought sauce. I'm not ashamed. It was delicious. 
Sweet Baby Ray's is a favorite around here. It's gluten free, but it does have sugar and corn syrup for those of you who would prefer to stay away from that altogether, which is usually our plan. 
Since I haven't perfected a Paleo Friendly version yet, we went with what we had. 
I'm developing a BBQ sauce, but I need to work on it a bit more before I'm happy with it. 
So here's the plan for those leftovers. 


Ingredients 
Yield 2 
Preheat oven 400 degrees 

2 Sweet potatoes
Extra virgin olive oil 
Kosher salt 

Wash all dirt off the potatoes, dry and pierce the skin with a fork several times to create some ventilation and let steam escape while baking. 
Rub Extra Virgin Olive Oil on potatoes and dust with kosher salt. 
Bake for 45-60 minutes in a foil lined pan (for easy clean up). 
The natural sugars in the sweet potato will begin to bubble up through the pierced skin. 
When they are done they will feel soft when gently squeezed. Notice the uncut potato in the picture...it has been squeezed. 
Handle with care, you know the game...Hot Potatoes!

Heat up some BBQ with your favorite sauce. Split the potatoes and fill with the BBQ! 
Serve with a side of Creamy Cole Slaw or Steamed Vegetables like we did here.
