This is so simple. We had this on our Chicken Carne Asada Tacos last night, which were Paleo Friendly and completely Gluten Free! We had Coconut Flour Tortillas to wrap up the chicken, Mango Salsa and some Cauliflower Lime and Cilantro Rice.

I love to walk into a market and find beautifully ripe fruit. That always gives me inspiration. Yesterday these mangos looked just right, so I grabbed some and made some salsa.
I remember walking through the grocery store with my Mom and she would smell and touch everything! This is exactly how I do it. My sweet husband goes with me sometimes, I know that has to be challenging for him. He patiently pushes the cart and waits for me to inspect, touch, smell and then sometimes change my mind. He is a good man!
This Mango Salsa takes hardly anytime to prepare. It can be made as hot as you want by adding more jalapeño pepper. I used the cup method to peel the mango. If you don't know what that is, I would encourage you to Google that craziness. It's on the verge of genius!
This is great on just about anything. Tacos, grilled chicken, hamburgers, Salmon, really any fish, on chips. Everything.
Here is the recipe!
1 mango, diced
1 jalapeño pepper, seeded and diced
1 tbsp red onion, diced
1 tbsp red bell pepper, diced
2 tbsp fresh cilantro, chopped
1 tsp raw honey
2 tsp extra virgin olive oil
1 lime, juiced
salt to taste
Mix all of this together, cover and refrigerate for at least 30 minutes to let flavors marry.
Then enjoy!
Today we got right back into our workouts!
A tough Kettlebell workout was the plan for this morning.
So, here is what we did.
There isn't a warm up or cool down in the video, so make you do something to get your muscles warm before doing this workout and stretch afterwards to prevent injury.
