Triple Chocolate Fudge Brownies

This is a Friday night favorite at our house. Usually served up as a Chocolate Overload Sundae.

I make a homemade Dark Chocolate Ice Cream and a Dark Chocolate Ganache to piece it all together. Top it with a few fresh raspberries to cut the richness, and you're set.
And that, my friends, is why we workout so hard all week!

For periods of time in my life I have done strict eating plans. One of them being Food Combining, where you eat only foods that digest together. There are quite a few rules to follow on a plan like that, such as not combining proteins and grains. Or only eating certain fruits together, and never eating fruits with any other food. And absolutely no refined sugar! It worked very well for me! But I was in my early 30's. Almost anything worked when I was 30! Even after 3 c-section births. My kids said at the time that it ruined their lives. So dramatic! But of course as they have grown up, they've discovered healthy eating for themselves. That's priceless.
It was good to have a young metabolism. But after 35 I started noticing subtle changes.

Being over 40, 43 to be exact, has brought on some new challenges. But life experience has made the idea of moderation a way of life. It's okay to have a little decadent dessert periodically.

Not for the faint of heart. These brownies are to die for! 

I will be posting the Dark Chocolate Ice Cream and Ganache recipe to go with these gooey beauties very soon.


It's time to start the brownies! 


I bake a batch of these, cut them into squares and then freeze in an airtight container. Then when we want a dessert on the weekend, or if I have unexpected company, there's always a dessert. Just take one out, microwave for 30-45 seconds. Top with ice cream or whipped cream! Done! 

Preheat oven to 325 degrees 
Prep Time: 10 minutes
Bake Time:  25-30 minutes

The Ingredients 
1 cup unsalted butter 
5 ounces (or 1/2 bag) Ghirardelli bittersweet chocolate chips 60% cocoa 
2 cups unbleached flour 
4 heaping tbsp cocoa powder 
1/2 cup dark brown sugar 
1 1/2 cup granulated sugar 
1 tsp salt 
1 tsp baking powder 
4 eggs 
1 tbsp vanilla extract 
5 ounces bittersweet chocolate chips (use the rest of your bag from above) 
5 ounces white chocolate chips

The Method 
1. Melt the butter and 5 ounces of chocolate chips together in a saucepan 

2. Mix together the next 6 ingredients in a bowl 

3. Add the slightly cooled butter and melted chocolate mixture to the dry ingredients 

4. Add eggs and vanilla and mix until combined well. Careful to not over mix. 

5. Fold in bittersweet chocolate chips and white chocolate chips. 

6. Pour into a 13x9 inch pan lined with parchment paper so that it hangs over the ends. This forms your handle to lift the brownies out for easy cutting later.
    (If you don't have parchment paper, use foil and spray with cooking spray. I've done it and it works just fine.)

7.Bake for 25-30 minutes at 325 degrees then cool slightly. Enjoy the chocolate buzz.
