The smell of this bread alone is a reason to bake it today!
There is hardly a scented candle on the market that could compare to how this smells while it is baking. Each time I start making bread I feel this gentle nudge on my hip. I look down and I see a pair of inquisitive dark brown eyes looking at me. It's Luke the Goldendoodle. Even he knows that homemade bread smells incredible. It just smells like HOME!
If you are going to eat bread, making your own is one of the best things that you can do. My personal opinion is that if you have to put out the effort to make it, you will enjoy it so much more! Then it's not a convenience food, all packed up for you. Your hands made it. It just tastes so much better. I don't have scientific proof, but I believe you eat less of it and it's better for you and it's just more satisfying! Give it try.
Yields 2 loaves
Bake at 400 degrees for 30-40 minutes
1 cup whole milk
1 cup water
1 tbsp honey
2 tbsp blackstrap molasses
1 tbsp or packet rapid rise active dry yeast

Heat the milk and water to 115 degrees and add next three ingredients and let sit for 5 minutes until foamy to ensure yeast is active.
2 1/2 cups whole wheat flour
2 cups bread flour
1 cup rolled oats and additional oats for topping bread
4 tbsp melted unsalted butter

1. Mix all of the dry ingredients together in a mixing bowl. Mix until all dry ingredients are combined evenly.
2. Next, add half of the liquid ingredients and mix on low until incorporated. Add the rest of the liquid ingredients and replace the paddle attachment with a dough hook.
3. Add the melted butter and knead with the dough hook on medium speed for 6-10 minutes. The dough should not be sticking to the bowl. If it is, add a tablespoon of flour at a time until it is hugging the dough hook.
* If you do not have a mixer you can do all of this by hand. Just knead the dough by hand on a floured surface until it is smooth and elastic.*
4. Once the dough is smooth place the dough in an oiled bowl and cover with a damp, warm tea towel and place in a warm spot to rise for approximately an hour.
It should double in size.
5. Now punch the dough down and knead a few times. Divide the dough in half and shape into loaves. Place in bread pans and let rise for about 45-60 minutes.
6. Bake the loaves at 400 degrees for about 30-40 minutes. The bottom should sound hollow when you thump on it. Let the bread cool for about 10 minutes in the pan. Remove from pan and cool completely before slicing.
