Sweet Potato Soup and 42 Minute HIIT Cardio and KettleBell Workout

Hi Friends!
Today I wanted to share something so simple that I almost wasn't sure if it was worth sharing.
But maybe it will give you an option if you eat as many sweet potatoes as we do.
Whenever I bake sweet potatoes I try to make enough for a couple of meals so I don't have to heat my oven up again.
When you are following a "workout meal plan" you will see "baked sweet potato" SO MANY TIMES!

In our house I have baked them whole, cut them into fries, made them into sweet potato pancakes, and a warm sweet potato salad with a honey lime vinaigrette, tossed with toasted nuts and a few dried cranberries (that one is my favorite!) I will share that recipe next time I make it.

But here is the ridiculously simple soup. I am almost ashamed of calling this a recipe.




Equipment that I used to make the sweet potato soup:

NutriBullet Rx Blender with Soup Mode:

   If you have not seen this kitchen tool...it is so fantastic! It blends everything and heats your soup in a 7 minute cycle. Just awesome for when you are in a hurry and want a healthy soup.

Serving yield 2
prep and cook time 10 minutes

1 large pre-baked sweet potato, skin on
1 tbsp chopped onion
1 tbsp chopped celery
1 tbsp chopped green bell pepper
2 cups chicken stock or vegetable stock
kosher salt and cracked black pepper to taste
garnish of your choice, I used greek yogurt, sliced almonds, and basil

Place all ingredients in your NutriBullet Rx and press the button for soup mode and just relax.
Soup will be done in 7 minutes, hot and ready to serve.

119 calories
2.4 g fat
23.1 g carbohydrates
2.2 g protein


Tip #1  You can add 1/4 mixed raw nuts or almonds to this. It blends it completely.

Tip #2   If you do not have a NurtiBullet Rx that no problem. Just blend all of the ingredients in a regular blender and transfer to a sauce pan and stir over medium heat until hot. 

Tip #3   For the onion, celery and green bell pepper, (aka as the Holy Trinity in cooking) I do what my Mom has always done. Chop a large batch up and place in a ziploc freezer bag. Flatten it the bag and squeeze excess air out and seal. Place flat, in freezer. Break of a piece when you need it. So handy!

If you don't have a weight you can always do this as a body weight exercise. We use BowFlex Adjustable Dumbbells for all of our home workouts.
