Salsa!
It has to be in the fridge if dinner is taking a while and tummies are rumbling. So this is my go to, easy as pie, perfect every time, Texas Girl's Salsa.
We are from Texas...if this stuff is not in the fridge...get a rope.
It's super easy and super delicious!
You can spoon this over boneless skinless chicken breasts before baking for a flavor packed lean high protein meal. I serve that with some black beans and a salad with avacado dressing.
Here is how it's done!
•2 -15oz cans Fire Roasted diced tomatoes
•1/4 cup sliced pickled jalapeños
•1 medium onion, roughly chopped
•1-2 tsps fine sea salt, add more or less •2 tsps ground cumin
• juice of 1 lime
•1/2 cup chopped cilantro
Add all ingredients to medium saucepan, reserving Cilantro. Simmer on medium heat for about 10-15 minutes.
Use a hand blender or food processor to pulse ingredients to desired texture. My husband isn't a fan of large pieces of onion, so I always grind this stuff up pretty fine. Or what you may know as "restaurant style". Lastly! Just add your fresh chopped Cilantro and check the salt, adjust if necessary. Sometimes I add a tablespoon of sugar if the heat from the jalapeños is too much for those with sensitive palates.
